Origin: Lisbon, Portugal, May 1975

Zodiac sign: Gemini

Work: He left behind the dream of becoming an astronaut and is part of 100 Maneiras since 2014, where we worked as a sommelier for four years. He left us too soon, on June 1st 2019, but he will always be a part of our story (and our hearts).

Name: Narayan Sapkota, the “Hard worker”

Origin: He was born in August 1988, in Baglung, Nepal

Zodiac sign: Leo

Work: Working as a cook at 100 Maneiras since January 2019, it was in the Portuguese kitchens that he moved forward, at the suggestion of friends, starting by washing dishes in 2016. Still, he doesn’t forget his first dream, to be a singer, and you can hear him singing many times while he’s cooking (and cleaning everything around him!).

Name: Nuno Rocha, the “be yourself”

Origin: Born in September 1975, in Lisbon

Zodiac sign: Virgo

Work: Give him a surfing board and you’ll see him smile. With his dad, a lifeguard, he learned to live and love the beach and the ocean, which still makes him get up early in the morning to find the best waves. He currently works as a reservations supervisor at 100 Maneiras, where he has been since June 2017.

Name: João Franco, the “cheap talk”

Origin: Born in September 1997, in Lisbon

Zodiac sign: Virgo

Work: As a child, he dreamed of becoming a zoologist. Today, he tames beasts behind the counter, as a bartender for all restaurants of the group. After three years studying law, he switched to F&B management and discovered a passion for spirits, which led him to join this team in June 2022. He is formal in speech, the tool he uses without weight or measure within and off the counter.

Name: Eugeniu Musteata, the “demanding”

Origin: He was born in April 1994, in Krasnoyarsk, Russia

Zodiac sign: Aries

Work: Born in Russia, in Krasnoyarsk, son of Moldavian parents, he has been in Portugal since he was 8 years old. Still, he did not lose his Russian rigid upbringing, which sparked him a taste for mathematics and made him consider a life working with numbers, even if it was the taste for the kitchen that ended up winning.
Besides working as a sous-chef at 100 Maneiras since April 2018, he is also one of the owners of Poke Bowl.

Name: Nuno Faria, “the undecided”

Origin: December 1980, Funchal, Portugal

Zodiac sign: Sagitarius

Work: It’s hard to believe that he once wanted to become a priest… He’s a partner and F&B manager of 100 Maneiras since May 2010 and one of the most familiar faces of Bistro 100 Maneiras.

Name: Nelson Santos, “the picky one”

Origin: He was born in Lisbon, Portugal, in September 1972

Zodiac sign: Virgo

Work: As a child, he dreamed of becoming an aviator. Life, however, showed him a different destination: Lisbon, where he is one of the partners-managers of 100 Maneiras since January 2009.

Name: Cátia Lagarto, “the friendly”

Origin: Santarém, Portugal, February 1995

Zodiac sign: Pisces

Work: Although she dreamed of becoming a nurse, she now helps people in a different way, every night, working as a waitress at 100 Maneiras since June 2016.

Name: Gabriel Sandrin, the “brother”

Origin: He was born in June 1992, in Rio de Janeiro, Brazil

Zodiac Sign: Cancer

Work: Fan of Ronaldinho, he had plans to become a footballer but ended up doing dribbles in the kitchen. He arrived in Portugal decided to build a career between the pots and the knives and is on the right track: he has been working as a cook in 100 Maneiras since June 2018.

Name: Luis Ortiz, the “confident”

Origin: He was born in January 1989, in Guadalajara, Mexico

Zodiac Sign: Capricorn

Work: His grandmother’s “carne con chile” is still part of his memories today and it was it was crucial for him to decide what to do with his life: a cook, no doubt. For love, 6 years ago he packed his bags and came to Portugal, following his girlfriend. He has been in 100 Maneiras since October 2018 and he’s currently the Creative chef of the group.

Name: Rosa Stanisic, “the warrior”

Origin: She was born in Sarajevo, Bosnia and Herzegovina, in September 1952

Zodiac sign: Virgo

Work: As a child, she dreamed of becoming a poet. A true warrior, she’s been working as a cook in 100 Maneiras since January 2009.

Name: Yaneko Schutte, the “focused”

Origin: Born in April 1991, in Lisbon.

Zodiac sign: Aries

Work: Son of a German mother and a Mozambican father, he dreamed of being a footballer (a sport that still fascinates him) or an architect. Along the way, he began working in restaurants – he joined 100 Maneiras as a waiter in January 2017. He’s the head of service at Bistro since 2021, but the plan to study architecture isn’t over yet. “It’s never late,” he believes. “Better late than never,” replies a certain bottle…

Name: Manuel Maldonado, “the man on fire”

Origin: He was born in February 1987, in Cascais

Zodiac sign: Aquarius

Work: As a young kid, he was fascinated by the ocean and dreamed of a career in biology. But it was the fire with which his grandfather cooked and that Manuel learned to use in the scouts that took him into the kitchen. Since May 2017, he is a chef on the 100 Maneiras team.

Name: Amilcar Drumond, “the seducer”

Origin: Funchal, Portugal, March 1970

Zodiac sign: Aries

Work: If as a child he dreamed of being a firefighter or an astronaut, it was wine that won him over, as a grown-up, and made him take the place of sommelier in the 100 Maneiras family, where he has been since 2009 – with two breaks in between – making him one of the oldest faces of this house!

Name: Maria Wanzeller, the “Girl With a Pearl Piercing”

Origin: She was born in June 1995, in Barreiro

Zodiac sign: Gemini

Work: As a child, she wanted to be a mad scientist and, therefore, it was in forensic medicine that she decided to enroll. Physics, however, got in the way and ended up leading her to say goodbye to medicine and surround herself with other types of instruments, in the kitchen. After working with chef Luis Ortiz in Fortaleza do Guincho, she followed him to 100, where she works as a cook since August 2018.

Name: Diogo Ramos, the “big mouth”

Origin: Born in June 1993, in Almada

Zodiac sign: Gemini

Work: There’s a famous story of when this cook from Bistro prepared a duck rice that had everything to be excellent – except it had no rice. Part of the team since 2020, not even the pandemic masks prevented him from gaining the reputation of having a big mouth. A fan of Sporting, he dreamed of becoming a football coach, but with both parents working in restaurants it was the kitchen that won the match in the end.

Name: Miguel Ângelo Fernandes, the “perfectionist”

Origin: Born in February 1970, in Lisbon

Zodiac sign: Aquarius

Work: As a kid he dreamed of becoming an aviator but life took him to other flights, in a long career made working at night, as a porter. The years gave him many stories but a gentleman never tells – and Miguel Ângelo doesn’t hesitate to say that he has memory problems. He became a partner of 100 Maneiras’ group in April 2021 and is the responsible for Management Control.

Name: Tiago Leal, the “loving”

Origin: He was born in February 1985, in Angra do Heroísmo (Azores)

Zodiac sign: Aquarius

Work: It was in Angra do Heroísmo that Tiago met chef Ljubomir. Encouraged by the proposal to come to discover new opportunities in the continent, he accepted the invitation, in July 2018, to assume the position of maintenance manager of the 100 Maneiras restaurants. Today, he reconciles his work with his favorite lifelong hobbie: playstation.

Name: David Almeida, the “calm”

Origin: Born in March 1994, in Lisbon

Zodiac sign: Piscis

Work: He says that he arrived to this business by accident. Although he dreamed of becoming an actor, during theater school he realized that it wasn’t exactly the path he wanted and started working as a waiter to save some money. Since then, the accident has turned into a career: he joined Bistro in July 2022, where he stands out for his extreme politeness and zen spirit, even in the most chaotic moments.

Name: Silviane Tavares, the “life of the party”

Origin: Born in March 1990, in Santo Antão, Cape Verde

Zodiac sign: Aries

Work: In 2010, Silviane came to Lisbon to study. The dream? To become a cook. So far, it hasn’t been possible yet, but the cleaning worker at the group’s restaurants still holds the dream of one day working on the other side of the kitchen door. We will be here.

Name: Salar Kayhan, the “asshole”

Origin: Born in December 1984, in Teeran, Iran

Zodiac sign: Sagitarius

Work: He was born in Iran, raised in Denmark and traveled half the world before arriving in Portugal. As a kid, he loved to draw – and he still draws many of his creations as a chef. He’s been part of 100 Maneiras team since January 2017 and he’s currently a sous chef.

Name: Natasa Stanisic, “the tenacious”

Origin: Sarajevo, Bosnia and Herzegovina, January 1972

Zodiac sign: Capricorn

Work: As a little girl, she dreamed of the day when she would become a painter. Her art is different, now: she has the challenge of assuring everything goes smoothly at 100 Maneiras, where she’s part of the direction since August 2015, as a Control manager.

Name: Nelson Amaro, the “gentle giant”

Origin: He was born in December 1981, in Lisbon

Zodiac sign: Sagittarius

Work: The story of Nelson and 100 Maneiras is an old one. As a child, he dreamed of being an architect, but his passion for customer service spoke louder and made him one of the players at the opening of Bistro 100 Maneiras in 2010, where he worked as a waiter. A few months later he decided to discover the world and left for Saint Tropez, Monaco, Côte d’Azur … A baggage that he brought back to 100 Maneiras, to where he returned in May 2018, as restaurant manager.

Work: In Nepal, he was a teacher. Since he arrived at 100 Maneiras, in September 2017, where he began working as a kitchen porter, his goal was to become a great cook. He made it in 2020, cooking with pride and the will to become always better.

Name: Alexandre Fraga, the “unbearable”

Origin: Born in June 1997, in Porto

Zodiac sign: Cancer

Work: Passionate about travel, he headed to Switzerland as soon as he finished his post.graduation in hotel management school and his internship at Vila Joya, in the Algarve. For two years, he worked at the Schauenstein Schloss (say this three times without making a mistake and Alexandre will buy you a glass), a 3 Michelin star restaurant, where he learned a lot of what he knows. And he learned well: in 2020, he accepted the second invitation to join this team, and became head of service at 100 Maneiras. 10 points for us!

Name: Ricardo Alvino, the “human”

Origin: Born in October 1993, in Lisbon

Zodiac sign: Libra

Work: As a child, his grandfather had a cafe and Ricardo helped him whenever he could. He has been working in the area since he was 16, having worked with chefs such as José Avillez, António Galapito and Alexandre Silva. In November 2021, he joined 100 Maneiras as a waiter and just a year later he became assistant restaurant manager of Bistro. Outside of work, he is a regular at electronic music parties.
