100 Maneiras has spent its life travelling.

Across countries, cultures, memories, flavours and stories. We brought a little of each place home with us, and carried a little of ourselves to every place we went. Now, the journey takes the opposite direction.

We are coming home.

To Portugal. To the flavours we know by heart, the aromas that stay with us, the landscapes we thought we knew and that continue to surprise us. We return to the land, the sea, the seasons, the produce and the people who bring it all to us.

Not to repeat what we already know. But to discover it all over again.

Because sometimes, you need to travel the whole world to understand what has always been right in front of you.

This is our journey home.

PORTUGAL,
ONCE AGAIN

We know Portugal. Or at least we thought we did.

Now, we are travelling through it again, through what grows from the land, comes from the sea, changes with the seasons and passes through the hands of those who know their craft.

We look for the ingredient before the dish. The producer before the product. The origin before the technique.

What is familiar interests us just as much as what is unexpected.

Because returning does not mean repeating.

It means looking again.

NATURE DOESN’T STAY AT THE DOOR

It comes in.

It climbs the walls. Hangs from the ceiling. Appears on our plates. It changes with the seasons and reminds us, every day, where what we do truly comes from.

At 100 Maneiras, cooking begins long before the kitchen. It begins in the land, the sea, time itself and in the hands of those who produce.

That is why we try to make the most of every ingredient, including the parts others might leave behind.

Because flavour is never wasted. It is transformed.

And often, it is precisely where no one else was looking that we find what we were searching for.

Inside the 100 Maneiras kitchen, you can hear different languages, accents and stories.

And we wouldn’t have it any other way. We like kitchens with room for different worlds.

Ideas thrown across the counter. Technique, precision and a little chaos. Laughter between services. People who arrive from different places and end up cooking in the same direction.

Great dishes need time, technique and respect for the ingredient.

But before any of that, they need people.

100 is made of them.

AT THE TABLE

A meal at 100 does not begin with the first dish.

It begins long before.

With the produce. A journey. A memory. A conversation. A landscape. An apparently absurd idea that someone decided not to give up on.

At the table, all of these things come together. Portugal appears as we know it — and perhaps as we have never seen it before.

There are familiar flavours in unexpected places. Ingredients we thought we knew, given new lives. Memories that return without asking permission.

We do not want to show you Portugal.

We want to rediscover it with you.

IN THE GLASS

The main character is not always on the plate. Sometimes, it is in the glass beside it.

The 100 wine cellar has grown with us: journeys, discoveries, producers, stories and bottles that found their place here.

Wine accompanies the journey, but it can also change it. And for those who choose to travel without alcohol, there are other paths to explore.

After all, we are called 100 Maneiras for a reason.

100 IS LIFE

We live through ingredients, but also through people.

Through long conversations. Tables with personality. Small details no one really needed to invent, but that we are very glad someone did.
