Bistro 100 Maneiras is a historic restaurant in the center of Lisbon, with two floors, including a private room, and capacity to welcome around 70 people. It is a hymn to pleasure, art, music, history and contemporary times. And this characteristic, which brings together so much, made it #1 in the world at the Monocle Restaurant Awards in 2017 and third place in the same awards the following year.
Bistro means “clean and clear” in Bosnian. “Clean and clear” the space, the ideas, the food. Here, it’s served comfort food, with a choice made à la carte between a fixed menu and a daily menu (created when the menu was reformulated in 2022), with creations designed from the traditional Portuguese, “Yugoslavian”, French and Italian gastronomy, with an author’s touch and inspirations brought from the travels, experiences of the chef patrón, Ljubomir Stanisic and the team led by the executive chef Manuel Maldonado. Without pre-arranged limits.
Limitless, too, are the suggestions coming from the bar, much more than a business card for Bistro, headed by Rafael Vairinhos, Bruno Fernandes and João Franco. They are responsible for continuing the legacy of more than a decade of cocktails made in 100 Maneiras, with published books (100 Cocktails 100 Maneiras, launched in 2015 by Esfera dos Livros), accumulated awards (Best Restaurant Bar in Portugal in the Coaster awards 2017 and the same title, in 2019 and 2022, at the Lisbon Bar Show Awards, for Bistro 100 Maneiras bar) and a philosophy that remains: the gastronomic approach to classic mixology, using ingredients that come from the kitchen in cocktails, to create, just like in food menus, journeys around the world – ours and the one around us – in a liquid state.
