Jorge Camilo, “o rufia”, nasceu em Lisboa no d Jorge Camilo, “o rufia”, nasceu em Lisboa no dia 3 de Junho de 1985. Fez parte da equipa fundadora do Bistro, em 2010, e foi como chefe de bar do grupo que permaneceu até agosto de 2021, altura em que saiu para beber outras experiências. Passou por bares e restaurantes, foi consultor, abriu um negócio próprio de cocktails engarrafados… Cresceu, aprendeu, tornou-se (ainda) melhor. E regressou a esta casa em Fevereiro de 2025, para assumir mais uma vez o cargo de chefe de bar do grupo. Família é família. Parabéns, grande Jorge 🥳🥂

Jorge Camilo, “the punk”, was born on June 3, 1985, in Lisbon. He was part of the founding team of Bistro, in 2010, and remained as the group’s bar manager until August 2021, when he left to “drink” other experiences. He worked in bars and restaurants, was a consultant, opened his own bottled cocktail business… He grew, learned, became (even) better. And he returned to this house in February 2025, to once again take on the role of bar manager of the group. Family is family. Happy birthday, dear Jorge 🥳🥂

Starting June 20, we’ll change our working hours to better serve both our clients and our team’s needs. Instead of opening every evening for dinner only, we’ll also serve lunches on Friday and Saturday (with new menus especially designed for this time of the day - stay tuned!) and we’ll close our doors on Sunday and Monday, to allow our team to rest.
