// There were two songs used as passwords for the revolution of 25th of April.
The first song broadcasted on the radio as a signal for the beginning of the Revolution, intended to prepare the troops for departure, was “E depois do adeus”, by José Niza, performed by Paulo de Carvalho (10:55 pm on April 24, 1974 @ Emissores Associados de Lisboa).

The second was “Grândola, Vila Morena” by José Afonso, which Rádio Renascença played (00:20am on April 25, 1974), and served to confirm the start of operations.

Do dia. São pratos que surgem quando nos chega a matéria-prima e desaparecem tão depressa quanto o apetite dos comensais. É sustentabilidade aplicada em benefício do prazer: cozinhar aquilo que de mais fresco nos chega em cada altura, seguindo a filosofia da cozinha do Bistro - sabor, amor, rigor. Estas molejas de cabrito, servidas com trufa, são um exemplo disso mesmo. O aproveitamento de uma parte tantas vezes descartada, transformada em iguaria de edição limitada, disponível enquanto houver. É ir espreitando o menu do dia e apanhá-las se conseguirem.

Of the day. These are dishes that appear when the produce reaches us and disappear as quickly as our guest’s appetite. It is sustainability applied for the benefit of pleasure: cooking the freshest that comes our way at any given time, following Bistro’s cuisine philosophy - flavor, love, rigor. These kid goat sweetbreads, served with truffle, are an example of this. The use of a part that is so often discarded, transformed into a limited edition delicacy, available while it lasts. Take a look at the menu of the day and grab them if you can.

Filho de mãe alemã e pai moçambicano, sonhava s

Filho de mãe alemã e pai moçambicano, sonhava ser jogador de futebol (desporto que ainda o fascina) ou arquitecto. Pelo caminho, começou a trabalhar na restauração e chegou ao 100 Maneiras como empregado de mesa em Janeiro de 2017. É, desde 2021, chefe de sala do Bistro, mas o plano de vir a estudar arquitectura ainda mexe. “Nunca é tarde”, acredita. “Mais Vale Tarde que Nunca”, responde uma certa garrafa… Parabéns, Yaneko! 🍾🥳

Son of a German mother and a Mozambican father, he dreamed of being a footballer (a sport that still fascinates him) or an architect. Along the way, he began working in restaurants - he joined 100 Maneiras as a waiter in January 2017. He’s the head of service at Bistro since 2021, but the plan to study architecture isn’t over yet. “It’s never late,” he believes. “Better late than never,” replies goertain bottle... Happy birthday, Yaneko! 🍾🥳
