
Mamma Ciao at Bistro
After almost two decades in the kitchens of 100 Maneiras’ restaurants, Rosa Stanisic, our “Mamma Rosa”, packs up her knives and apron and heads off for a well-deserved retirement. But not before we celebrate all she has given us. From April 1st to 6th, at Bistro, we gather some of her most iconic dishes and a signature tribute cocktail, specially mixed by our bar team for the perfect Mamma farewell party. Mamma ciao, ciao, ciao!
Rosa Stanisic, “the warrior”. Born in Sarajevo, in 1952, she used to dream of becoming a poet. Strong and courageous, she fought for her life twice: first as a victim of domestic violence, then as a victim of the war. Protecting her children, never letting the nightmares destroy the poetry and the beauty of life. During the war, Ljubomir says she was able to cook potatoes in 100 different ways, always surprising them, feeding their bodies and souls in a context of scarcity and showing the future chef the power of creativity.
When Ljubomir decided to open the first 100 Maneiras in Lisbon, in 2009, one year after the bankruptcy in Cascais, Mamma Rosa joined him. She left her job and her home in Serbia and flew to Lisbon. There, she was a fundamental part of the new (now old) 100 Maneiras, helping Ljubo with every detail, non-stop, even sleeping in the restaurant with him.
She became a professional cook at 100 Maneiras. Mamma Rosa’s creations would become some of the most beloved items on our menus: the burek, the kid goat and the goulash from Bistro (amongst many others), the Welcome to Bosnia (oh, the flower bread!) and the Tree of Life (oh, the baklavas!), first and last moments of the tasting menu in the Restaurant, which tells many life stories – including Mamma’s.
She became 100 Maneiras’ “mamma”. A strong but loving presence, respected and cherished by everyone who was ever part of this family.
Celebrating the moment of her retirement was therefore mandatory. And that’s what we’ll do with “Mamma Ciao”: a kind of farewell party but in an extended format – in terms of time and guests. Because if there’s one person who deserves a big goodbye when it’s time to retire, it’s definitely our Mamma Rosa. So, from April 1st to 6th, for anyone who wants to join the party, we’re bringing to Bistro’s menu some of her most iconic creations over the years.a kind of farewell party in an extended format – in time and in terms of guests. So, from April 1st to 6th, for those who want to join the party, we bring to Bistro’s menu some of her most iconic creations throughout the years: Cheese and spinach burek, Ćevapi, Sarma, Kadum butic, Goulash, Mamma’s kid goat, Tufahija and Baklava, but also specialties such as Welcome to Bosnia, the first moment of the tasting menus served at the 100 Maneiras Restaurant, here combining the inevitable Flower Bread, ajvar and kajmac, all prepared by the kitchen team led by executive chef Manuel Maldonado with head chef Eugeniu Musteata.
The choice can be made à la carte, depending on your appetite, or in a pre-defined menu format with 7 moments (45 euros per person). To accompany this, there will also be a special tribute cocktail with rakija, the typical Yugoslavian brandy (and pisco), with roses, but also raspberry, cherry, Granny Smith apple, basil and dill. Mixed by the bar team led by Jorge Camilo, it was appropriately named “Mamma Mia” and it will join other surprises that aim to help toast our Mamma.
