
Bistro’s Bar heats up the end of this Winter
More mature, more experienced, (even) better: this is how Jorge Camilo returns “home”. The bartender from Lisbon, who was part of the founding team of Bistro 100 Maneiras in 2010, at just 25 years old, one of the authors of the great national cocktail book “100 Cocktails 100 Maneiras” (Esfera dos Livros, 2015) and who played the role of bar manager of the group until his departure in August 2021, has just returned to 100 Maneiras to, at the age of 39, become once again the supreme commander of the group’s bars.
During the three and a half years he was away from 100 Maneiras, he worked at several restaurants and bars, did consulting work and opened his own bottled mocktail business. In December 2024, as part of the 100 Maneiras Advent Calendar – an action that, for 24 days, promoted events in the group’s different physical and online spaces – he returned to Bistro’s Bar, joined by Daniel Zamith, his former partner behind this counter, for a very special take over. And it was this (re)encounter that paved the way for the prodigal son to return home.
Camilo’s mission, who knows the group’s liquid history like no one else, is clear: to redesign a more balanced cocktail menu, aligned with what has been, since the beginning, the philosophy behind the group’s cocktail making – a gastronomic approach to classic mixology, bringing many of the ingredients used in cocktails from the kitchen.
But also to bring back the soul, essence and spirit of 100 Maneiras to Bistro’s Bar. Funk and bold, eclectic and carefree, designed for everyone without fitting into any label. Equal only to itself. Not a small feat. But if there is a man who is up to the challenge, that man is Jorge Camilo.
The first changes can already be tasted at Bistro and Carnal, the Mexican gastrobar just a few meters away from the first. The new alchemies at 100 Maneiras Restaurant, in Bairro Alto, are being finalized, as well as new cocktail menus to celebrate the arrival of Spring (literal and metaphorical) at the counters.
But first, starting on March 6th, there will be a series of special initiatives taking place at Bistro’s Bar, in partnership with Hendrick’s, a long-time associate – who names the private room on the first floor, with decor inspired by the brand’s botanicals. And it is precisely in this room that part of this special initiative takes place. To introduce the new Hendrick’s Oasium, a limited edition gin created by Lesley Gracie, Hendrick’s master distiller, all those who book Hendrick’s Room during the month of March will be offered a bottle of Hedrick’s Oasium (and tonics) to start, accompany or end their meal. Furthermore, all customers who come to have dinner at Bistro on Thursdays in March will be offered a “mini-but-mighty” gin based on the new Hendrick’s reference.
Jorge Camilo was given the (delicious) task of creating an exclusive cocktail with this new reference, which will be available on the bar menu every day until the end of March.
And to celebrate Women’s Day and the incredible women around us, including Lesley Gracie, the creator of this gin, all women who come to Bistro for lunch or dinner on March 8th will also be offered a cocktail created with Hendrick’s Oasium.
Because if it’s going to rain, it might as well pour in the glasses.
