100 Maneiras Restaurant was chosen for the national launch of Dom Pérignon Rosé Vintage 2009. On the 16th of November, our restaurant with 1 Michelin Guide star will be the stage for a special performance… From 8pm, dinner is served in an exclusive tasting menu, a Dom Pérignon champagne pairing and a live performance by GPU Panic, who will tailor the sound environment for this unique evening.
Dom Pérignon Rosé Vintage 2009 “is radiant, its fruit appears with all its majesty, round, rich and generous.” After a particularly harsh start to the winter in 2009 in the Champagne region, with intermittent snowfall and very low temperatures, spring arrived warm but rainy and the summer, despite the storms that raised concerns about the health of the vines, was sunny. Hot, dry and sunny days marked the month of August. Until, at the beginning of September, a hailstorm hit the vineyards in Hautvillers, Verzenay and Chouilly. The next day, however, everything was over. Summer time had returned. And the grapes continued to ripen in complete serenity, with the harvest beginning in mid-September, in “absolutely idyllic” conditions.
And it is in “heaven” too that we intend to be, with the 13-moment tasting menu prepared especially for this evening. From the well-known “Welcome to Bosnia” to exclusive creations such as Caviar, puff pastry “bilinis” and smântâna or Guinea fowl, macadamia and white truffle, every step of the dinner was designed to best accompany the journey that Dom Pérignon serves in the glasses, with the presence of four references (in addition to the Vintage that is launched), allowing those who join this experience to take a journey through some of its most iconic champagnes.
Joining the trip, GPU Panic, artistic name of Guilherme Tomé Ribeiro, brings a DJ Set designed to bring the perfect atmosphere to the event. Referenced in such influential media as Tsugi website (France) and with great reviews on platforms such as Deep House Amsterdam or Mixmag, his work and notoriety continue to grow, with prolific collaborations such as the one he maintains with Moullinex, with whom he embarked on a tour this year, as a duo.
With a cost of 420 euros per person, dinner on the 16th has limited seats and reservations for this evening are only available at 8pm. So that the journey can be made without any surprises – except for the sounds of corks leaving the bottles.
