Taproots at Bistro
João Sancheira, former bartender at Bistro 100 Maneiras and national winner of World Class Portugal 2021 (a competition in which our bartender Daniel Zamith was also a finalist), returns to Bistro’s bar on June 3 with a very special pop-up.
Taproots is the name of the project that João Sancheira created in response to the challenge presented to participants in the global final of the World Class competition: to create a project with a positive impact on the community.
For this, Sancheira joins an unemployed bartender to serve a cocktail on tap, with 50% of the sales value reverting to that bartender. In addition to this aid, at a time when many bars are still closed, the project also has an environmental aspect, since it intends to explore a piece of land in Vialonga where bartenders can grow, in a sustainable way, ingredients to develop new drinks. The objective is not only to reduce the costs associated with the cocktail and increase sustainable practices, but also to strengthen the sense of community among bartenders. In return, the spaces which host the pop-up are asked to contribute with organic waste for composting and fertilizing the land.
In Bistro’s case, this exchange will be made with ready-to-use compost from the composting machine that arrived to 100 Maneiras in 2019, which processes all organic waste from the group’s restaurants, transforming them into compost rich in nutrients such as nitrogen, phosphorus and potassium, to be used in farming.
