100 Maneiras flies to Madeira
It’s just one night, but it’ll be worth 100! On July 19, 100 Maneiras travels to Funchal, Madeira, for a unique dinner that combines products and traditions from the island with the cuisine (and wines) of chef Ljubomir Stanisic – and his team.
It won’t be the first time that chef Ljubomir Stanisic cooks in the island of Madeira – he had already done it in 2015, as part of the Rota das Estrelas program, invited by chef Benoît Sinthon, from the Il Gallo d’Oro restaurant. However, this will be the first time that the chef takes the 100 Maneiras structure with him to Funchal, for an event organized by the Castanheiro Boutique Hotel, taking place on July 19, 2024.
“À Mesa no Castanheiro, Chef Maurício Gonçalves convida…” is the name of the project responsible for 100 Maneiras’ trip to the Tipografia restaurant. More than a reproduction of what is done in Lisbon, the goal is for Ljubomir Stanisic and Manuel Maldonado, executive chef of the 100 Maneiras group, to also delve into the island’s traditions and products, designing a unique menu that combines these origins with the irreverence and boldness that is a hallmark of the 100 Maneiras group. An example of this is “Welcome to Bosnia”, the first moment of all the menus served at the restaurant (1 Michelin star) in Lisbon and which, here, is presented with an influence of the island, bringing together at the same table Eastern specialties, such as “flower” bread, ajvar, kajmak, pasteta and stelja but also limpet “butter”.
“Feel the Beet” (beetroot, almond cheese and dill), “Black Hole” (cuttlefish, carrot, shallots, red bell pepper and achiote), “Sarajevo Cigar” (potato foam, smoked tea bread and duvan čvarci “tobacco”) and “Mixed Salad” (anchovies, truffle, parmesan and raspberry powder) are dishes that travel from 100 Maneiras’ menu to Castanheiro, more or less transformed, allowing those who sit at the tables of Funchal that night to also travel to number 39 on Rua do Teixeira, in Bairro Alto, in Lisbon.
In addition to these, there will also be dishes created especially for the date, using local products, such as “Crab My Curry”, with “jacas” (small crabs) and curry, “Land Ahoy”, with the fish caught by the chefs in Madeira – so help Saint Peter, patron saint of fishermen -, accompanied by spinach and dashi, “Miss Piggy”, suckling pig porchetta, topinambur, red bell pepper and truffled potatoes, and “Holy Cheese”, with Santo da Serra “requeijão” cheese foam and pitangas.
Accompanying this very special dinner, a pairing of very special wines, chosen by Nuno Faria (one of the partners of the 100 Maneiras group and responsible for the drinks area) and António Maçanita, both at the head of the Companhia de Vinhos dos Profetas e dos Villões project, which produces wines in Porto Santo and Madeira island. In addition to the references of this project, the wine pairing is also made with Mestiço wines, the new brand launched by Ljubomir last April, and ends with a late harvest by 100 Maneiras: Mais Vale Tarde do Nunca 2015 , produced in partnership with Real Companhia Velha, in Douro.
